If you love a pop of colour at a party, then you can’t get much more colourful than this yummy Funfetti cake (Rainbow Cake is an exception to the rule). We love this Funfetti birthday cake, dotted with different colours throughout the cake layers. The flavour of the cake is vanilla with vanilla buttercream, so it’s a crowd-pleasing flavour all-round with a fun feeling throughout.

Also known as Confetti cakes, they date back to at least the 1950s in the United States of America. Betty Crocker put out an advertisement in 1956 in Life called a new “confetti angel food” cake mix, it evolved into the Funfetti cake in 1989 when the American Pillsbury Company introduced their “Funfetti” cake – a combination of fun and confetti which gained a huge popularity.

A Funfetti cake may look simple but it’s actually rather difficult to achieve. In America, sprinkles contain a lot of additives and colours, many of which are banned in the UK. So, a lot of our hundreds and thousands won’t do when creating one of these cakes. The problem with supermarket sprinkles in the UK is that many of them just disappear in the cake batter, the worst for these are the really tiny balls, and the sugar strands that are really pale in colour. Your best bet is trying to find the most vibrant and biggest sprinkles you can on the UK market, if you can find the thickest ones that’s great. Or, if you have the time and patience there are plenty of recipes online that show you how you can make your own sprinkles, however, there’s no guarantee these would work. And you also have to put a lot of sprinkles in the batter too, think of how much you would usually include in a recipe and then at least double i
