TikTok and Instagram.


Like all the best viral food trends, it has travelled fast. People saw the little cups online, heard
the satisfying spoon scrape, loved the rainbow finish, and suddenly everyone wanted to try
one.


But while the internet may have made dot cakes famous, the idea behind them feels very
familiar. This is not a serious, formal dessert. It is not trying to be clever. It is simply taking
the best bits of a birthday cake and making them smaller, spoonable and even more sprinkle-
covered.


Which, frankly, is a very good use of everyone’s time.

 

Why is the dot cake trend so big?


There are a few reasons dot cakes have taken off.

Spongey Dot Cake Cups Recipe
Serves
6 to 8, depending on the size of your cups.
You will need
1 Sponge Birthday Cake
Extra vanilla buttercream, homemade or shop-bought
A generous bowl of hundreds and thousands or rainbow nonpareils
Small clear cups, ramekins or glass jars
A round cutter, glass or cookie cutter
A piping bag or spoon
A palette knife or the back of a spoon


Method


1. Start with your Sponge Birthday Cake at room temperature. Cake is always softer and
happier when it is not fridge-cold.

2. Slice the cake horizontally or cut it into neat layers, depending on the size of your
pots.
3. Use a small round cutter or the rim of a glass to cut circles of cake that fit inside your
cups. No need to be too perfect. This is meant to be fun.
4. Place one circle of cake at the bottom of each cup.
5. Add a layer of buttercream. You can pipe it for a neater finish or spoon it in and
smooth it down.
6. Add a second layer of Birthday Cake, then another layer of buttercream on top.
7. Smooth the final buttercream layer so it is flat and even. This is the bit the sprinkles
will stick to.
8. Pour your hundreds and thousands into a shallow bowl.
9. Turn each cup gently upside down and press the buttercream top into the sprinkles. If
your cup is too full to turn over, simply spoon a thick layer of sprinkles over the top
and gently press them into the buttercream.
10. Chill for 10 to 15 minutes if you want a firmer top, then serve with spoons and let
everyone crack in.
