Celebrating special occasions is something that everyone does, it helps us mark momentous events that have meaning to us. We all want to celebrate important things such as birthdays, anniversaries, welcoming a new baby into the world, our loved one getting a new job, and so much more!

So, finding an appropriate gift for the occasion is important, and there is no better gift than cake! For people with a gluten intolerance, it can be difficult to find a delicious cake. When we were taste testing other gluten free cakes, we always found that they were dry and crumbly, and overall, not a very pleasant eating experience.

We know how disappointing it can be when you can't have gluten and you have to settle for a dry and stodgy gluten free cake for your birthday. That's why we made it our mission to develop a range of gluten free birthday cakes that don't disappoint in taste, flavour or texture. We wanted them to taste exactly like our standard sponges so people wouldn't even be able to tell the difference.

It took a lot of batches but we finally hit on the perfect combination of ingredients for gluten free baking and we now have eight gluten free birthday cake flavours and we also regularly come up with new gluten free specials.

Gluten Free Millionaires Cake

Our gluten free cakes are ideal to send to anyone for any occasion, even if it’s just to let them know you’re thinking of them. We have lots of flavours to choose from, including traditions flavours such as Chocolate, Victoria, and Lemon, along with less traditional flavours like Millionaires, and chocolate and caramel. There are lots of flavours to choose from which are available as Sponges for 8 or Sponges for 16; we are sure you’ll find a flavour they’ll love. Gluten Free Lemon Cake

Lemon cakes are a delicious combination of sweet cake with a zesty tang from the citrus fruit. They are almost refreshing in their taste, and simply scrumptious. Our gluten-free Lemon Sponge Cake is just as yummy as our standard range. We worked hard to perfect our gluten-free cake range. While we were taste testing other gluten-free cakes, we always felt a little letdown, especially by shop-bought ones, as they were often dry and crumbly. So, we set out to create a range of gluten-free cakes that are just as moist and tasty as our standard ones.

Our gluten-free lemon cake with a sweet citrus sponge made with lemon oil & bound together with lashings of lemon buttercream. The gluten-free sponge is made with natural lemon oil, free-range eggs, and a gluten-free flour mix to create a light and fluffy citrus cake. Natural lemon oil is also used in the buttercream and white chocolate is drizzled on top.

There’s nothing better than sitting down with a nice cup of tea or coffee and a slice of a beautiful cake. Our sponge layers are thick and the buttercream sandwich in between is ample, creating very appealing and generous slices to enjoy.


Our celebration boxes are a pre-made party in a box, and they are available with gluten free baby sponge cakes. How To Make Gluten Free Cake

Over the last few years, our gluten free cake sales have grown massively and now represent about 25% of the total number of sponge cakes we sell. We are increasingly finding that our trade customers are so confident in how good our gluten free sponge cakes taste, they are switching all their cakes over to gluten free rather than stocking gluten and gluten free options.

When Sponge first started to experiment with gluten free cakes, we found the tricky bit was making sure the sponges held together. After trying various gluten free flour options, we settled on Doves Farm flour as we think they make the best gluten free flour. However, just replacing the flour alone was not enough to make one of our delicious gluten free sponges. We initially found the sponges were not holding together as well as we would have liked and the texture was not quite good enough either. It took us lots of test batches to get the right combination of milk, ground almonds & a little bit of xanthan gum, which we add to the gluten flour, sugar, margarine and eggs.


We use this recipe in our bakery to make baby sponges, sponges for 8 people, sponges for 16 people, our sharing sponges and sponge slices for our cake cards. We sell our gluten free cakes online, to wholesale and to corporate customers.

So, to the method. We mix the sugar and margarine as we would one of our traditional sponges until the mix is light and fluffy. We then shell the local free-range eggs and add them to the mix at a slow mixer speed, along with a natural flavouring depending on the sponge we are making. The flour is gradually added to the mix, followed by the ground almonds and xanthan gum. The bowl is regularly scraped down to ensure the ingredients are fully mixed together. Finally, the locally sourced milk is slowly added. The mix is then measured into the tins & the tins go onto the trays and then onto the rack. After spending around 30 minutes in oven, we roll out a batch of 60 delicious bases which will make up 30 cakes. To get our legendary height, we always use 2 bases to make one our cakes rather than cutting a single base in half.

Our butter icing is made using a combination of British salted and unsalted butter and British icing sugar. Again, depending on the flavour, we add a natural flavouring to the icing. One of the bakers will spread a generous amount of butter icing in the middle and on the top of the cake. The gluten free cake will then be sealed in its own bag to keep it fresh. Within an hour of it being baked, the cake is then stored in the freezer to seal in its freshness, waiting for an online order to send out next day delivery to be enjoyed anywhere in the UK.
