Matcha-misu: A Fresh Twist on a Classic Dessert

So, when our new Matcha Cake landed, we couldn't stop thinking about all the different ways to enjoy it. Alongside a cup of tea? Delicious. With an iced matcha latte? Even better. But then we thought... what if we gave one of our favourite desserts a Sponge makeover?

Introducing Matcha-misu.

Our take on the classic Italian tiramisu swaps coffee-soaked sponge fingers for fluffy slices of our Matcha Cake, layered with a rich mascarpone filling and finished with a dusting of vibrant matcha. It's creamy, fresh and just the thing for anyone who loves trying something a little different.

Matcha-misu Recipe

Serves 2

You'll need:

1 slice of Sponge Matcha Cake

4g matcha powder

40ml warm water

250g mascarpone

3 tbsp cream cheese

3 tbsp icing sugar

4 tsp lemon curd

Method

1. Make the creamy filling

Mix together the mascarpone, cream cheese, icing sugar and lemon curd until smooth, light and creamy.

2. Prepare the matcha

Whisk together the warm water and matcha powder until smooth and free from lumps.

3. Soak the cake

Cut your slice of Matcha Cake into eight pieces and briefly dip each piece into the matcha mixture. You want the sponge to soak up the flavour without becoming too soft.

4. Layer it up

Place two pieces of cake into the bottom of each ramekin. Spoon over a generous layer of the mascarpone mixture before repeating with another layer of cake and another layer of cream.

5. The finishing touch

Dust with a little extra matcha powder if you'd like an extra burst of flavour and that classic tiramisu finish.

Then simply grab a spoon and enjoy.
