Tea works both ways: a blog by SPILL Tea
We’re SPILL - the new everyday tea. Started by us – Lou and Sofia – because tea has got too cheap and farmers don’t get enough.
We’ve been in tea for a long time. We started teapigs nearly 20 years ago, and Lou spent years before that as a professional tea taster and buyer (yes, that is a real job).
Since then, coffee’s gone speciality, beer’s gone craft and bread’s gone sourdough. But the tea we drink every day has got cheaper instead of better.
So, we started again.
A BOLD everyday tea from Rwanda (some of the world’s best black tea comes from here). We buy it direct and pay farmers well above Fairtrade minimums. The tea is then packed in Norfolk. You can learn more about who grows SPILL tea here.
As it’s Afternoon Tea Week, we’ve got together with Sponge – they’re just down the road from us.
Always hard to say no to tea and cake.
And as it’s summer, you could push the boat out and have your tea iced.
Here’s a simple recipe:
Always in the Fridge. Our simple iced tea.
You’ll need:
4 SPILL teabags
500ml boiling water
6 tsp honey or maple syrup
Juice of ½ lemon
What you do:
Add the teabags to a jug and pour over the boiling water.
Brew for 5 minutes, then remove the bags.
Stir in the honey and lemon juice.
This is your base. It keeps for a few days in the fridge.
To serve:
Mix 1 part base with 1 part cold water and add lots of ice.
Add more or less sweetener depending on how you like it.
A slice of grapefruit is also very good.
