This cake packs a fruity punch, with apricot and lemon flavours complimented by ground almonds and finished with a golden crown of Demerara Sugar. It is a summery light and fruity Sponge with a layer of Apricot Jam replacing our more common buttercream filling. This Sponge is set to be a new best seller as a great tasting Sponge in its own right. Couple that with the fact it is both Gluten and Dairy free and we think it is a winner for everyone! bought a wedge of Elizabeth sponge today at Good Food show(NEC Birmingham) for my sister as it was !! gluten free, really moist and tasty went down well with a nice cuppa. coffee sponge wonderful as usual.

I bought this cake for a Jubilee Party. Everyone said it was a delicous cake, I personally thought that the jam was a little too sweet but other than that it was lovely.

If this is a dairy free cake, then why does it have butter? I am a great fan of sponge. My favorite is chocolate orange. Divine!!
